I love family traditions, don’t you? Especially during the holiday season, it’s one of my favorite times to celebrate family. So today, I’m sharing a bit of my family with you. My grandfather was from Sperlonga, Italy. One of his favorite things to make was eggplant meatballs.

This recipe is actually named after my Aunt Maria. She uses my grandfather’s original cookie sheet to make her eggplant meatballs and they are delicious! Here’s the eggplant meatball recipe below. So I hope you enjoy it and share it with your family!

Aunt Maria’s Awesome Eggplant Meatballs

Ingredients
  • 2 Med Eggplant
  • 2 eggs
  • 1 tbs garlic (crushed)
  • ¼ cup fresh Parsley
  • 1 tsp salt
  • ¼ cup chopped basil
  • ½ cup panko bread crumbs
  • ½ cup Romano or Parmesan cheese (grated)
  • 1 tsp black pepper
  • splash red wine
  • 1 cup plain Italian bread crumbs
  • 1 tbs olive oil
Instructions
  1. Grate the eggplant then sweat with salt for 30 min
  2. Rinse thoroughly and squeeze out excess water in a kitchen towel
  3. Mix all remaining ingredients together except Italian bread crumbs and cheese
  4. Mix together the eggplant and mixture and roll eggplant into 1-2 inch balls
  5. Roll each ball in plain Italian bread crumbs
  6. Place on an oiled cookie sheet and bake 15 minutes at 375 degrees on each side (total 30 minutes)
  7. Sprinkle with grated cheese
  8. Serve with Marinara sauce on the side or just pop them in your mouth!
  9. Optional – you may fry the balls if desired
  10. Add extra basil or spices as preferred
