Whether you need a hearty, yet healthy breakfast to fuel your morning workout or a dish that compliments your best brunch spread, this Hearty Garden Breakfast recipe is one of my favorites! It’s easy, healthy, and incredibly flavorful.

Hearty Garden Breakfast

Ingredients
  • 2 eggs with 2 tablespoons water and pinch of salt, scrambled in a bowl
  • 1½ cups cooked brown rice
  • ½ cup broccoli, chopped small
  • ¼ cup mushrooms, chopped
  • 3 tablespoons parmesan cheese, grated, fresh
  • ¼ cup beefsteak tomatoes, chopped
  • 2 teaspoons vegetable or olive oil
  • salt and pepper to taste
Instructions
  1. In a small sauté pan, heat oil on med/high heat
  2. Add broccoli mixture, mushrooms and sauté for about 2 minutes
  3. Add rice and 2 tablespoons water, cover, reduce heat to medium, and cook for 1 minute
  4. Then add egg and cook until firm, solid and not clear, about 2-3 minutes
  5. Finally, when eggs are almost completely cooked, add tomatoes and parmesean cheese, stir
Notes
Cauliflower may used in place of broccoli
